Shrimp Curry with Eggs & Potatoes

Ingredients

Curry Paste

2 Tbspcurry powder

1 TbspMasala

1 Tbsptumeric

1 TbspGround Cumin

1 Tbspgarlic
grind

1 tspginger paste

1 tspsalt

Water
to mix into paste
Season Shrimp

2 lbsShrimp
cleaned, deveined, tail off

salt
to taste

ground black pepper
to taste

2 tspAll Purpose Seasoning

1lemon juiced
Remaining Ingredients for Curry
Instructions
Step 1
Wash the shrimp with the juice of a lemon. Season with the ingredients listed above. Let the shrimp marinate for at least 30 minutes.
Step 2
Mix all the ingredients for the Curry Paste and set aside.
Step 3
Add oil to a wide bottomed pan.
Step 4
Once the oil is hot, add whole, boiled eggs and fry for a few minutes, turning to get all sides brown.
Step 5
Remove eggs from the pan and set aside.
Step 6
Add curry paste to the same pan and cook for 4 minutes, stirring frequently.
Step 7
Add sliced onions and chili peppers to the curry paste and cook for an additional 4 minutes.
Step 8
Add potatoes to the pan and cook for 5 minutes, covering pan.
Step 9
Add the seasoned shrimp and combine with potatoes and curry paste. Cook for 5-7 minutes.
Step 10
Add boiled eggs, tomatoes and salt to taste and cook for 5 minutes.
Step 11
Add 1-2 cups of boiling water and cook for an additional 5-10 minutes, until potatoes are cooked through.
Step 12
Garnish with sliced scallions and serve with rice or roti. Enjoy!
