SEASONED STEAK WITH CHIMICHURRI SAUCE AND GARLIC WEDGES

Instructions

Step 1
To prepare the garlic potatoes, place the potato wedges in a bowl and cover with water. Drop in some ice cubes and leave to soak for at least 30 minutes.
Step 2
To make the chimichurri sauce, mix all the ingredients together in a small bowl with 1 tablespoon water. Set aside to allow the flavours to develop.
Step 3
Remove the steaks from the fridge at least 20 minutes before cooking. Rub them all over with the black pepper and garlic and onion granules and season both sides generously with coarse sea salt.
Step 4
Drain the potatoes, pat them dry with a clean paper towel and place them in a bowl. Add the garlic and onion granules, paprika, salt and a good pinch of black pepper. Spray with olive oil spray, toss and then spray again to coat.
Step 5
Preheat the air fryer to 200°C/400°F for 2 minutes.
Step 6
Line the air fryer basket with non-stick baking paper or use the grill pan insert. Spray with olive oil spray. Add the potato wedges and air-fry for 20 minutes until golden. Turn the potatoes halfway through cooking and spray again with olive oil spray. Remove and set aside.
Step 7
Preheat the air fryer to 200°C/400°F for 3-5 minutes (it needs to be really hot before you add the steaks).
Step 8
Place the steaks in the air fryer, spray with olive oil spray and cook for 8-10 minutes, depending on thickness. This should result in medium-rare - cook for longer if you prefer it cooked to medium/well done (though chimichurri steak is best served medium-rare).
Step 9
Rest the steaks for 8-10 minutes, then slice them thinly against the grain. While the steaks are resting you can add the potatoes back in to reheat, then adjust the seasoning to taste.
Step 10
Serve the steak slices, drizzled with the chimichurri sauce, with the potato wedges and additional greens (if you like).
