Ingredients

2onions
medium, diced
1green pepper
large, diced
200gchestnut mushrooms
sliced
335gbroccoli
cut into florets
300gspinach
2 x 400gchopped tomatoes
tin
2 Tbsptomato purée
4cloves garlic
minced
2 tspbasil
salt
freshly milled black pepper
600gtubular pasta
125gmozzarella
ball, shredded
50gcheddar cheese
grated
olive oil
for cooking
Instructions
Step 1
Cook the pasta per packet instructions then drain and toss in a little olive oil.
Step 2
Heat some oil in a large saucepan on medium heat and toss in the onion and garlic. Fry until softening then add the mushrooms, broccoli, pepper and basil. Cook for 10 minutes, stirring occasionally.
Step 3
Add the spinach and combine. Cover and cook for 2-3 minutes until wilted then pour over the tomatoes and add the tomato purée. Season and then bring to the boil before turning off the heat.
Step 4
Stir in the mozzarella and pasta before pouring into an ovenproof dish.
Step 5
Top with the cheddar and some breadcrumbs and then bake in the oven at Gas mark 6/400F/200C for 20 minutes.
