Step 1
Grate the zuchinni over paper towels sprinkle with salt and let sit 5 minutes
Step 2
Squeeze out the liquid from the zucchini then add to a bowl with 2 eggs some pepper and salt to taste and the shredded mozzarella . Mix to combine then pour into a lightly greased oven proof pan . Bake at 200 c 400 f fan setting for 20 minutes

Take out the pan add tomatoes sauce and torn mozzarella with sliced olives then put under a grill until the cheese is golden and melted . To serve have with your favorite herbs like basil . Enjoy
