8apples
lg sized, any type of cooking apple will work
2 tspbutter
or margarine
⅓ cupGranulated Sweetener
or Stevia In The Raw, or sugar
1 tspground cinnamon
¼ tspapple pie spice
optional
¼ cupdried cranberries
optional, omit to reduce the sugar amount
Crumble Topping
Instructions
Step 1
Cut 3 tbl butter from a stick and put in freezer for a few minutes to harden. Preheat oven to 400°.
Step 2
Melt 2 tsp butter in large non-stick frying pan turned to very low heat.
Step 3
Peel apples, cut into slices and place in frying pan. When all the apples are in the pan, add 1/3 cup sweetener, cinnamon, and apple pie spice. Sauté a few minutes, and when apples are starting to soften add cranberries and cook a few minutes more.
Step 4
While the apple mixture cooks, put grind the oatmeal for about 30 seconds, just until oatmeal is a bit more finely ground. Add almond meal and other 1/3 cup of sweetener and pulse to combine. Remove butter from the freezer and grate into the mixture, then pulse a few times to combine.
Step 5
Pour cooked apples mixture into the bottom of a 9'"x13" crockery or glass casserole dish. (If you use a metal pan, spray with non-stick spray.) Sprinkle the crumble mixture over the top of the apples in an even layer.
Step 6
Bake 30 minutes, or until the mixture is slightly bubbling and lightly browned on top. Serve hot.
