2 x 480gCans Butter Beans
Drained and rinsed

0.5Brown Onion
Diced

1 CloveGarlic
Diced

1 TbspFresh Sage
Chopped

0.5 TspDried Thyme

1 Tbspolive oil

1 CupPumpkin Purée

1 CupSoy Milk
or as needed

0.33 CupCashews
Soaked in hot water for 10 minutes and drained

0.25 CupNutritional Yeast

2 TbspTahini

2 Tbsptomato paste

0.5juice of lemon

Instructions
Step 1
Heat olive oil in a fry pan over medium to high. Add onion and sauté for 2-3 minutes. Add the garlic, sage and thyme and sauté for a further 1-2 minutes.
Step 2
Transfer onion and garlic mix to a blender. Add all other sauce ingredients and blend until smooth. Add more soy milk if needed.
Step 3
Pour the sauce back into the pan and add the butter beans. Bring to a simmer and once thickened, remove from heat. This will take 5 - 10 minutes. Serve with choice of rice or toast and garnish. Store leftovers in the fridge for 3 - 4 days.
