Garlic and Chili Chicken in a Creamy Mascarpone & Parmesan Sauce

Instructions

Step 1
Slice the Chicken Breasts in half to make 4 breasts and add to a bowl.
Step 2
Add the garlic powder, salt and pepper, cumin, chilli and paprika powders and mix into the chicken.
Step 3
Add the vegetable oil into the bowl and rub into the chicken.
Step 4
Heat a large sauté pan or skillet to medium-high heat.
Step 5
Once the pan is hot spray some oil into the pan/skillet and place in the chicken breast and cook for 3 minutes on each side.
Step 6
Remove the chicken and allow it to rest in a bowl.
Step 7
Add the butter to the same pan/ skillet and melt.
Step 8
Add in the sliced garlic and fry for 30 seconds and then add in the mascarpone and stir until the cheese has melted.
Step 9
Add in the chicken stock and stir.
Step 10
Add in the parmesan, oregano and thyme stir and allow to reduce by a third.
Step 11
Add in half of the chopped parsley stir and cook until the sauce starts to thicken. Add in the soy sauce stir and then return the chicken and the juices and into the pan and coat with the sauce.
Step 12
Cook until the sauce thickens to your desired consistency.
Step 13
Time to plate, serve with Rice or pasta. Garnish with more parsley lick your lips and enjoy.
