Ingredients

⅔ cuplight brown sugar
1egg
large
½ cupcanola oil
2 teaspoonsground cinnamon
¼ teaspoonsnutmeg
¼ teaspoonspumpkin pie spice
½ teaspoonkosher salt
160gwhole wheat pastry flour
1 teaspoonbaking powder
½ teaspoonbaking soda
2apples
small, peeled, cored, and cut into half moon slices
1 tablespoonsturbinado sugar
Confectioners sugar
for dusting, optional
1 cupapplesauce
Instructions
Step 1
Position a rack in the center of your oven and preheat to 350°. Butter or coat a 9-inch round pan with nonstick spray. Cut a strip of parchment to fill the bottom circle of the pan.
Step 2
In a large bowl, whisk brown sugar and egg until pale and foamy. Add the applesauce, oil, cinnamon, nutmeg, pumpkin pie spice, and salt. Whisk until smooth and emulsified.
Step 3
Add the flour, baking powder, and baking soda, and whisk until well combined and smooth.
Step 4
Pour the batter into the prepared pan, tap the pan gently on the counter to release any air bubbles, and smooth the top of the batter with an offset spatula. Arrange the apples over the top of the batter in two circles, and sprinkle with turbinado sugar over the top.
Step 5
Bake until puffed and golden and a tester inserted into the center comes out clean, 45-55 minutes. Set the pan to cool for about 15 minutes, then transfer to a cooling rack to cool completely.
Step 6
Dust the top with confectioners sugar just before serving, if desired.
