Ingredients

Pumpkin Muffins:
1can pumpkin purée
1egg
1 tspvanilla
⅓ cupmaple syrup
1 cupflour
1 tspbaking soda
⅙ cupground sunflower seeds
⅙ cupground sesame seeds
½ tspbaking powder
½ tspsalt
½ Tbspcinnamon
¼ tspcloves
½ tspground ginger
Crumble:

Step 1
Preheat oven to 375°
Step 2
In a large mixing bowl, add all the dry ingredients for the muffins and whisk together.
Step 3
In a separate bowl, whisk the egg, then add it into the dry ingredients. Add the wet ingredients to the bowl and mix until evenly combined, then set aside.
Step 4
In a separate, small mixing bowl, add your almond flour, oats, nut butter, maple, and ginger, use your hands to mix together, leaving some large clumps as the crumble
Step 5
Add parchment paper to your muffin tins, then scoop in the muffin batter. Top each muffin with the crumble
Step 6
Bake for 17-20 minutes, or until a toothpick comes out clean.
Step 7
Remove from tin and let cool for 5 min before serving
