Instructions
1. Season and Sear the Pork Chops:
Step 1
Season the pork chops with salt and black pepper on both sides.
Step 2
In a large skillet, heat the olive oil over medium-high heat. Add the pork chops and sear them for about 3-4 minutes on each side, or until they are golden brown and cooked through. Remove the pork chops from the skillet and set them aside.
Make the Caramelized Peach Sauce:
Step 3
In the same skillet, add the chopped onion and minced garlic. Sauté for 2-3 minutes until the onion becomes translucent.
Step 4
Add the drained peach slices and cook for an additional 2-3 minutes, allowing them to caramelize slightly.
Step 5
Sprinkle the brown sugar over the peaches and stir to combine. If you like a hint of spice, you can add ground cinnamon at this point.
Step 6
Pour in the reserved syrup from the canned peaches and the chicken broth. Stir well and bring the mixture to a simmer.
Simmer and Finish:
Step 7
Return the seared pork chops to the skillet and let them simmer in the peach sauce for about 5-7 minutes, or until the sauce thickens slightly and the pork chops are heated through.
Step 8
Stir in the butter to add richness and gloss to the sauce. Taste and adjust the seasoning with more salt, pepper, or brown sugar if needed.
Step 9
Plate the pork chops and spoon the caramelized peach sauce over them.
Step 10
Garnish with fresh parsley or chives if desired.
