Instructions

Step 1
Boil the broth
Step 2
In a small bowl whisk together the cornstarch and water. Add to the boiling broth, and mix.
Step 3
In another small bowl add the eggs, whisk together with a tablespoon of water.
Step 4
Slowly pour the egg mix into the boiling broth and cornstarch, stirring as you do.
Step 5
Finally add chopped scallions to the soup, along with salt and pepper to taste!
