1.5 poundsshrimp peeled and deveined

2 tablespoonsolive oil

3cloves garlic
minced

1 teaspoondried basil

1 teaspoondried oregano

½ teaspoonred pepper flakes

4 cupsbroccoli florets

2 cupscauliflower florets

2 cupsalmond milk
unsweetened

1 cupdairy-free Parmesan cheese
grated

8 ounceslow-carb pasta
zucchini noodles or shirataki noodles

fresh basil leaves
for garnish, optional
Instructions
Step 1
In a large skillet, heat the olive oil over medium-high heat. Add the minced garlic and sauté for about 30 seconds until fragrant.
Step 2
Add the shrimp to the skillet, sprinkle with dried basil, dried oregano, red pepper flakes, salt, and pepper. Cook for 2-3 minutes per side until the shrimp turn pink and opaque. Remove them from the skillet and set aside.
Step 3
In the same skillet, add the broccoli and cauliflower florets. Sauté for about 5-7 minutes until they are tender-crisp.

Stir in the almond milk and dairy-free Parmesan cheese. Simmer for a few minutes until the sauce thickens.
