Instructions
Step 1
Cut the tofu into small cubes and toss in a bowl with the rest of the tofu bacon ingredients and marinate for 30 minutes.
Step 2
After 30 minutes of marinating, add the tofu with all the marinade to the cosmo pan and fry until all the marinade has evaporated and the tofu is slightly crispy
Step 3
Cook pasta to packet instructions in salted water using either the cosmo pan or cosmo casserole - save 1 cup of the pasta water
Step 4
In a blender add the of the pasta sauce ingredients and blend until until super smooth
Step 5
Add drained pasta and the carbonara sauce back into the cosmo pan and combine over medium heat for 5 minutes
Step 6
Serve with the tofu bacon and parsley
