I cooked the chopped onion with olive oil until nearly translucent then added chopped mushrooms. I used fresh broccoli so I boiled it before adding to the onions and mushrooms. For the sauce, put everything in a blender and blend until creamy. Add chopped basil or vegan pesto to taste. It helps if the butter is softened. Add the sauce to the cooked veggies and cook until warm, then add cooked pasta and stir to coat. Add salt and pepper to taste, and serve as-is or with vegan parmesan. Done! Delicious and healthy.
