Instructions
Step 1
In a food processor, combine the avoado flesh, garlic cloves, jalapeño, fresh herbs, lime juice, the greens of the spring onions, lime juice, salt + pepper.
Step 2
Toast the pistachos, remove the skins, and add to the processor, reserving some for garnish.
Step 3
Blitz until creamy + smooth, streaming in the olive oil as you go.
Step 4
Add an ice cube or two for extra creaminess + green colour.
Step 5
To serve, top with pommegrante seeds, pistachios, olive oil, then serve with dipper of choice + enjoy!
