Instructions
Step 1
Beat the eggs with the parmesan cheese and all seasonings.
Step 2
Cook the ground beef and drain any fat. Add the ground beef to the egg and cheese mixture and mix until well combined.
Step 3
Spread the mixture onto a large baking sheet with sides (a jelly roll pan works well).
Step 4
The mix doesn’t have to fill the bottom of the pan, I made rounded ends.
Step 5
Bake for about 20 minutes in a 450 degree F oven.
Step 6
Remove from oven and drain off any grease.
Step 7
Place sliced tomatoes and spinach on top then sprinkle with mozzarella cheese.
Step 8
Return to oven on a high rack near broiler. Broil until cheese is melted and brown.
Step 9
This recipe is for after week 3 of the program since we suggest avoiding dairy until after week 3.
Step 10
You could use ground chicken or turkey in place of beef to make this even more low fat.
