Instructions

Step 1
Start by slicing the onion and cooking it in a pan with 2tbsp of olive oil and the thyme. Cook until softened on medium heat.
Step 2
Add the whole tomatoes and crush with a wooden spoon. Add a heafty pinch of salt and 10 leaves of basil. Remove the thyme branches
Step 3
Add the bread on top of the tomato onion mixture until covering the whole pan. Remove from the heat and let the pan rest for 5-10 minutes with a lid on
Step 4
Once the time has passed, start breading it apart with the wooden spoon. Move to a bowl once well incorporated and, with a whisk, energetically mix while trickling in the rest of the olive oil (to sort of emulsify)
Step 5
Adjust with salt and serve with a nice basil leaf on top. Enjoy!
