Instructions
Step 1
Grate the garlic
Step 2
slice half of the lemon into rounds
Step 3
cut the remaining lemon into wedges
Step 4
Large pan, medium high, olive oil
Step 5
Add the basa fillets and top with the lemon rounds with salt and pepper
Step 6
cook for 2-3 minutes on each side until golden
Step 7
combine the garlic and juice of remaining lemon with large knob of butter
Step 8
season w/salt and pepper
Step 9
Cook/microwave the rice
Step 10
roughly chop the tomatoes
Step 11
combine the spinach, tomatoes, rice and pesto into a bowl
Step 12
when the basa is golden, add the garlic butter to the panand cook for a further 2 minutes
Step 13
serve the basa on top of the spinach and pesto rice
