Instructions

Step 1
Optional pre-step: Par-boil potatoes whole. Let cool before slicing.
Step 2
Peel and chop carrots into 1/4" slices. Dice onion. Slice potatoes into 1/4" half round slices. Slice kielbasa into 1/2" rounds.
Step 3
Add 1 to 2 tbsp oil to large frying pan. Cook potatoes and onions over medium high heat for 5 minutes then add carrots, stirring to heat evenly.

Add splashes of water and cover, stirring occasionally to prevent burning. Continue to cook for 15-20 minutes or until potatoes and carrots are tender.
Step 5
Stir in kielbasa and cook until heated through. Kielbasa slices will "cup" slightly.
