MEXICAN MEALS FOR WEIGHT LOSS: TACOS GOBERNADORES 🌮 hands down my favorite way to enjoy shrimp tacos so I had to make a macro friendly version! While this recipe may seem complicated it’s easy and comes together in under 30 minutes. It will be on your weekly dinner rotation!

Instructions

Step 1
In a small bowl, mix 3 tbsp of lite mayo, 1 minced garlic clove, 1/2 tbsp jalapeño mustard, and chopped chipotle peppers (spicy) in adobo sauce. Put to the side.

2. Chop vegetables, shrimp, and mince garlic.
Step 3
3. Melt margarine in a pan and add the chopped onions & poblano peppers. Cook for 4 minutes, stirring frequently.

4. Add in 2 minced garlic cloves and cook for 2 minutes.
Step 5
5. Add in tomatoes and chipotle mayo. Cook for 4-5 minutes.
Step 6
6. Add in shrimp and cook for 3-4. Once they are pink they are cooked thoroughly. Season using salt and pepper.
Step 7
7. One serving: Warm up 4 tortillas on a comal for 30 seconds.
Step 8
8. Lightly dip the tortillas on top of the shrimp mixture to give it a red color.
Step 9
9. Add 14 G of fat free cheese & about 1.5 oz of shrimp mixture to each tortilla.
Step 10
10. Warm up a comal and add avocado oil spray.
Step 11
11. Cook for 1-2 minutes on each or until the cheese has melted and the tortillas are golden brown.
Step 12
12. Serve with any topping(s) or side(s)of choice.
