This recipe is one of my favorites from the whole series. A simple one pan dinner with perfectly cooked gnocchi coated in a rich cream sauce combined with sun-dried tomatoes, garlic, spinach, parmesan and fresh basil.
Ingredients:
500 g uncooked gnocchi
400 g lean chicken breasts
100 g sun-dried tomatoes in oil
50 g spinach
250 ml heavy cream
200 ml chicken broth
1 tsp minced garlic
1 tsp dried italian herbs
salt & pepper to taste
Directions:
In a large pan, cook chicken until no longer pink. Add garlic, Italian herbs, sun-dried tomatoes, heavy cream, and chicken broth. Simmer for a few minutes.
Add uncooked gnocchi and spinach. Cover and cook until gnocchi is tender and cooked through.Season with salt and pepper to taste.
Serve and enjoy!
