Aruna Vijay's instant aapam with quick Thai-based stew

Aruna Vijay on Indian cook show Master Chef came up with this super hit instant aapam. The Thai-based stew is what I make because my family prefers this over Indian stew.

Ingredients
4 servings
Aapam

rice
left over, less than half cup

1 cuprice flour

¼ cupgrated coconut

1 tspinstant yeast

1 tspsalt

1 Tbspsugar

1 ½ cupwater
warm
Thai based stew
Instructions

Step 1
Blend all the ingredients
Step 2
Allow fermentation for 30-40 minutes
Step 3
Heat and oil an aape pan, drop a tsp-full of batter and swish around to coat sides.
Step 4
Cover pan and cook for a couple of minutes
Step 5
Remove when the aapam is not wet in the middle and is pulling away from the sides (golden brown).
Stew
Step 6
Blend the coconut milk powder with water and curry paste.
Step 7
Heat some oil in a pan, cook the veggies.
Step 8
Add coconut milk mixture and allow to boil for a minute
Step 9
Add rest of the ingredients after removing from heat.
Step 10
Serve with warm aapam
