Rotisserie chicken pho is still one of my favorite easy pho hacks. So easy and so delicious!

0.5onion

2 slicesginger

Chicken Pho Soup Base
or Chicken bouillon

10 pcsstar anise

2 TbspRock Sugar

2 Tbspfish sauce
optional and to taste

2carrots

4stalks celery

1can quail eggs
optional

2 bagspho noodles
rice

Cilantro

green onions

white onions

lime

bean sprouts

hoisin sauce

Instructions
Step 1
Shred the chicken then use the bones for the soup. Slice the onion and ginger in lengthwise and pop this in the air fryer or use a pan to char it. This will give your soup a rich smoky flavor. Add water to a large soup pot, the chicken bones, onion, ginger, carrots, celery, star anise, rock sugar, soup base and fish sauce. Taste and adjust accordingly. If using the soup base, add according to the instructions on the container for the water/soup base ratio. Cook this for about 45 minutes and occasionally skim off the fat/impurities. Before serving, remove the star anise and the seasoning pouch.
Step 2
Cook the pho according to package instructions. Serve with the condiments of your choice.
