Instructions
Wash Rice
Step 1

Wash rice until water runs clear (3+ times)




Prep Eggs
Step 2
Beat eggs and add a pinch of salt in a bowl.


Marinate Chicken
Step 3

Cut down chicken breast into 4 to 5 slices

Slice chicken into dinner delivers


Step 5

Wash chicken slivers under cold water by swirling it around by hand for 30 sec, then squeeze it any excess water

Mix baking soda into the chicken and massage by hand for 30-45 sec


Step 7

Mix remaining seasonings into chicken by hand. Marinate for 15mins to over night.






Sauce Mixture
Step 8

Mix ingredients for Sauce Mixture until sugar desires and set aside.





Cook

Heat wok over medium high heat until lightly smoking.

Add oil to heat and swirl to cover wok.

Step 11

Add in beaten eggs to cooking oil. They should puff up around the edges. Stir after 15 secs and lightly scramble the eggs.

Remove eggs into a bowl until later.

Return wok to heat and wipe off remaining egg to prevent burnie bits from forming.

Add more oil and swirl

Add 2 oz of marinated chicken and shrimp. Press the meat to 1 layer to cook for about 30 to 45 sec. Continue cooking and stirring until about 95% done.

Remove meat into bowl with staged eggs until later

Add more oil and swirl (no need to wipe clean)

Add diced onions and diced carrots. Cook until onion is translucent.

Add chopped garlic. Stir for 15 to 20 sec.

Add in rice and stir. Break up clumps. Continue for a few mins.

Add eggs and meat. Beat up clumps and mix.

Push everything to the center and add Sauce Mixture around the edges. Stir in sauce until rice is no longer white.

Add salt and continue to stir

Add frozen peas and bean sprouts. Mix.


Step 25

Push everything to the center and add wine around the edges. Stir wine into rice and cook for 20 to 30 sec.

Kill the heat.
Step 27

Add sliced green onions and toasted sesame seed oil. Stir everything in.


Step 28

Taste. Adjust as needed where possible. Enjoy!
