Instructions
Step 1
In a large bowl mix together all the wet ingredients (banana, pumpkin purée, dairy free milk or water, maple syrup and vanilla extract) until well combined.
Step 2
In a separate bowl mix together all the dry ingredients (gluten free flour, potato starch, baking soda, sea salt).
Step 3
Add the dry ingredients to the wet ingredients and mix until combined. Add in any toppings you like, sliced apples, chocolate chips and/dried cranberries.
Step 4
Then add 2 tsp of coconut oil to a nonstick skillet, on low-medium heat create about 2-3 pancakes and cover with a lid for about 3-5 mins and then remove lid and add in another tsp of coconut oil around the slide of the pan, flip the pancakes and cook for another 1-2 mins.
Step 5
Top with extra sliced apple, maple syrup and a dusting of cinnamon.
Step 6
Make 4-5 pancakes.
