Smoked Turkey and Black Bean Soup

This recipe incorporates msg to reduce sodium content and add umami flavor. MSG has 2/3rds the sodium of table salt. Many recipes I've tried have said that you don't have to soak beans before pressure cooking. You don't have to, but the results vary with some beans being incompletely cooked, some being overcooked and some being perfect. I use the quick soak method and find the texture of the beans to be uniform. Makes 11 1-cup servings.

Step 1
Pre-soak black beans. Quick method: Add beans to Ninja Foodi, cover with 2 inches water, heat to boiling with saute/stovetop setting. Boil for two minutes. Turn off heat, close lid and let sit 1 hour. Drain and rinse. Overnight soak: place beans in pot and cover with 2 inches of water, let soak overnight. Drain and rinse.
Step 2
Add all ingredients to pot, close lid and set to pressure cook on high for 50 minutes. Natural release when cooking time is done.
Step 3
Remove turkey wings, discard bones and skin, and return meat to pot.
