I was going to write a whole thing about how these roast potatoes are the crispiest, most delicious things I’ve ever eaten. But I’ll just leave you with this: I ate this whole plate of potatoes within 5 minutes. Do with that information what you will 😂

Instructions

Step 1
First, pop your oven onto 200 and peel your potatoes and cut them into quarters.

Next, pop them in a pan full of cold water, ensuring the potatoes are covered. Now, the secret to these awesome roast potatoes is to add a sprig of rosemary, a good fist full of salt, and one garlic clove into the pan. (Your potatoes will absorb all of the flavour from your rosemary, salt and garlic while cooking, making them absolutely delicious.) Boil until your potatoes are fork tender

While your potatoes are boiling away, grab your oil of choice (I used coconut oil and a drizzling of olive oil, it helps make the potatoes fabulously crispy) add it to a baking tray and pop it into the oven until it’s piping hot

Once your potatoes are done, drain them off with a colander (saving the garlic and rosemary) and then shake them up to rough the edges up. This will ensure your roasties are amazingly crispy! Then, cover your potatoes with either a tea towel or a lid and leave your potatoes to steam dry for ten minutes (or until your oil is ready)

When your oil is ready you can add your potatoes to the baking tray and coat them in the oil. You’ll know if your oil is hot enough because your potatoes will sizzle when they make contact with the oil. Make sure you put your rosemary and garlic in the baking tray too!

While your roasties are doing their thing, add the rest of your rosemary, your lemon zest, and a decent handful of salt to a pestle and mortar. Crush it all up until it reaches your desired fineness, I made sure mine had most of the rosemary intact purely because I prefer it!

Now it’s time to check on our roast potatoes! Turn them over so they can cook on the other sides, the undersides should be golden by now. Your garlic should also be golden, if it’s not, let it cook for another few minutes but don’t forget to keep checking on it. If your garlic is perfectly golden, take it out and smoosh it using a fork. Then, add it to your lemon, rosemary, and sea salt mix and give it a stir to incorporate

Keep checking on your roast potatoes every 5 minutes until they’re beautiful and golden. They should be cooked within 40 minutes, but depending on your oven it could be sooner/longer
Step 9
Once your potatoes are gorgeously golden, pop them into a bowl using a slotted spoon, cover in your garlic, lemon, rosemary salt seasoning and give them a shake up to ensure every potato is coated. And that’s it! My deliciously crispy roast potatoes! Let me know what you think 😘
