Instructions
Step 1
Cut fish fillet into small pieces so that it is easier to make paste in a food processor.

Step 2
Add fish pieces, roe, awamori, ginger juice, salt and sugar to a food processor and whizz until the mixture becomes paste.

Step 3
Add eggs to fish paste and blend well.

Add the fungus & starch in a large bowl and mix well.

Add the fish paste to the bowl and mix well. Divide the mixture into 12 equal portions.

Heat oil in a skillet to 170C / 335F

Step 7
Wet your hands. Separate the fish cake mixture into 12ths and make balls, flatten to make a flat oval shape.
Step 8
Fry individually for 2 minutes and 25 seconds until bottom side of the fish cake is golden brown. Flip over and repeat for the other side
Step 9
Remove the fish cake and drain oil on a rack or kitchen paper. Serve.
