This is just the recipe for a cold and rainy day . It is satisfying filling and absolutely delicious . Juicy tender beef with root veggies and a hearty flavorful soup are just irresistible.

Step 1
Add a little olive oil to a pan then season the beef with salt and pepper and brown it in the pan. Get some good color on there then remove it from the pan

In the same pan fry the onion for 5 minutes then add the garlic . Deglaze if necessary with a little broth . Add the carrot and celery then toast the tomato puree and add the flour and mix together .

Add the Guiness or stout of your choice / sub broth if you don’t want to add stout . Add a good quality beef broth then add in the beef with a bay leaf and sprig of rosemary . Season with salt and pepper to taste and cook on medium low heat for 45 minutes

Step 4
Add in the potatoes and leek and cook a further hour and a half on low heat . Alternatively this can be cooked in the oven at 350 f/ 165 c . Once cooked serve immediately and enjoy with a nice chunk of crusty bread .
