Wet Marinade
Instructions
The day before
Step 1
Add baking soda to sliced meat and let it sit for 10 minutes as you prep wet and dry marinade
Step 2
Grind to fine powder all dry ingredients
Step 3
Mix dry and wet marinades
Step 4
Marinade the meat for at least 12 hours
Cooking the meat
Step 5
Maintain internal temperature of 145F for at least 4 hours: Settings on air fryer: 70C
Step 6
Turn half way through
Step 7
Then ramp up the temp to a max of 155F, air fryer settings: heat at 200 degrees for 4 minutes?
Step 8
Remove from oven, and pack in an air tight container to allow it to steam so it maintains its chew
