Instructions
Step 1
Mix poolish ingredients together. Leave out covered on the side for at least 16hrs.
Step 2
Next day, add all dough ingredients to stand mixer bowl and mix on low speed till combined. Then increase to medium speed and mix for 5mins. Transfer to bowl and wait 30mins
Step 3
Fold the dough by pulling up one side of the dough and pulling it over. Work around the dough. Then do a few tuck and folds. Wait 30 mins and repeat.
Step 4
After 30mins Preheat oven with Dutch oven inside to 250c
Step 5
30 mins later Turn dough out carefully on floured surface and do circular folds again to the center. Then do some crisscross folds. Flip on seam side and form boule ,rotating the dough.
Step 6
Transfer dough seam side up to well floured lined banneton/bowl. Do a few more crisscross folds. Wait 30-50mins
Step 7
Take out Dutch oven and flour bottom of the Dutch oven with semolina and flour the seam side of the dough. Flip dough on to hand and carefully lower it into Dutch oven
Step 8
Bake covered for 18mins. Then uncovered for 45mins to an hour till nice and dark.
