2yellow onion

2 poundslean ground turkey
or lean ground beef, undrained
6 ouncetomato paste
can
24 ouncepetite diced tomatoes

16 ouncecan tomato sauce
½ cupwater
optional
½ teaspoonfreshly ground black pepper
2cloves garlic
diced
4 teaspoonssalt
4 teaspoonschili powder
2 teaspoonschili lime adobo
or original calls for ancho chile powder
6 teaspoonsoregano
1 teaspoonsugar
2 x 16 ouncepinto beans in mild chili sauce
can, undrained
16 ouncecan kidney beans
drained
16 ouncecan white navy beans
drained
16 ouncecan black beans
drained
32 ozfrozen sweet corn
shredded cheddar cheese
to serve
Instructions
Step 1
1. In a large pot, sauté the chopped onion, green bell pepper and garlic in grapeseed oil over medium-high heat.
Step 2
2. Add in the turkey or beef. Before the meat has completely cooked, add the tomato paste. Finish browning the meat completely.
Step 3
3. Stir in the remaining ingredients, except the beans, corn, and the cheese. Bring to a boil. Reduce the heat. Cover and simmer on low heat for 30 minutes (or longer until the desired consistency is reached), stirring occasionally.
Step 4
4. Add in the beans and corn 20 minutes before serving (you can't add the beans in right away or they get mushy).
Step 5
5. Serve with sharp cheddar cheese.
