Mediterranean turkey-stuffed peppers

Can be frozen! Try not to overcook the peppers as they will collapse and lose their shape. Freeze the mince separately then just defrost, reheat and fill peppers with hot mince.

Instructions

Step 1
Preheat oven to 200°C (fan 180°C, gas mark 6).
Step 2
Rub the peppers with a little coconut oil, place on a baking tray and cook in the oven for 20 minutes.
Step 3
For stuffing: In a medium-sized frying pan over a medium heat add the remaining coconut oil and gently fry the onions for 2-3 minutes.
Step 4
Add the mushrooms, garlic and cumin cook for a further 2-3 minutes.
Step 5
Add the ground turkey, chopped tomatoes, tomato paste, soy sauce and oregano. Mix well in the pan and simmer for 10 minutes.
Step 6
Fill the peppers with the stuffing and top with the cheese. Flash under the broiler to melt cheese and serve with the greens of your choice.
