Instructions

Step 1
Start by bringing a large pot of salted water to a boil. Add your tortellini & cook according to package directions.
Step 2
In the meantime, add your butter & olive oil to a large pan set to low/medium heat.
Step 3
Add your fresh garlic, pepper, red pepper flakes & sauté for about a minute.
Step 4
Add your heavy whipping cream & bring to a simmer for about 3 minutes, or until it reduces slightly.
Step 5
Once reduced, add the juice of your lemon, stirring often so the mixtures don’t curdle.
Step 6
Add your zest & parmesan cheese & mix until melted & sauce thickens.
Step 7
Add your spinach, tortellini, & 1/3 cup of reserved pasta water & combine. Add more pasta water & taste for any additional seasonings here.
