Instructions
Step 1
Brown the meat with onion, drain
Step 2
Add rotel and stewed tomatoes and combine well.
Step 3
Add rice and enough water/broth to cover. Bring to a boil, reduce heat, cover and simmer until water evaporated
Step 4
When water evaporated and rice cooked, remove from heat, cover with sliced cheese and melt.
Step 5
Warm the beans in separate pot. (or cook dry beans ahead of time)
Step 6
Serve just like regular beans and rice with cornbread
