Step 1
Mix flour, salt, thyme and olive oil. Mix until you have a sandy mixture. Add the water and knead until combined. Rest in the fridge while preparing the cream cheese filling.
Step 2
Finely chop the onion and cook on medium-low heat, deglazing a couple of times, until caramelized.
Step 3
Combine all ingredients for the filling.
Step 4
Roll out the dough, transfer to a baking tray, then spread the filling, leaving some space at the edge to flip later.
Step 5
Top with the best tomatoes you can find, oregano and olive oil, then fold in the edges.
Step 6
Bake at 180°C for 35-40 minutes until golden brown.
Step 7
Top with some fresh herbs (I used basil and chives) and enjoy!
