Instructions

Step 1
Pre-heat oven to 200°C (390°F).
Step 2
In a medium bowl, whisk together the egg and stevia until light and fluffy, about 5 minutes. Add in the milk, yogurt and vanilla and whisk again until fully combined.
Step 3
Add in the flour and baking powder and mix well to combine. Set aside.
Step 4
Make the cinnamon swirl by mixing together the applesauce, stevia and cinnamon until well combined. Transfer to a piping bag.
Step 5
Divide the batter evenly between 6 prepared muffin cases and swirl each muffin with the cinnamon swirl. Bake for 10-15 minutes or until a toothpick inserted into the center comes out clean.
Step 6
As the muffins cool, make the frosting by mixing together the cream cheese and icing sugar.
Step 7
Pipe the frosting onto the slightly cooled muffins and enjoy!
