2chicken sausages
sliced

1onion
small, diced

1bell pepper

2 teaspoonsminced garlic

1 teaspooncajun seasoning

½ teaspoonsmoked paprika

¼ teaspoonchili powder

¼ teaspoononion powder

¼ teaspoongarlic powder

½ teaspoonred pepper flakes

1 cupbasmati rice

2 cupslow sodium chicken broth

7.75 ozcan diced tomatoes

7.75 ozcan red kidney beans

Instructions
Step 1
Heat a large frying pan to medium-high heat and add olive oil. Add sliced sausage and saute for about 5 minutes, until cooked through.
Step 2
Add the diced onion and cook until soft. Add in the minced garlic and spices. Cook another minute.
Step 3
Add chicken broth, tomatoes, beans and rice. Turn up the heat and bring to a simmer, stirring regularly.
Step 4
Lower heat and place the lid on the frying pan. Cook for 20 minutes, then turn the heat off and let it sit for 5-10 minutes without lifting the lid.
