This sandwich is inspired by the love I have for zaatar! So, find the recipe for hummus and zaatar to make your own. Or you can buy good quality Palestinian zaatar. So what goes awesomely with zaatar? Olive oil obviously Courgette/zucchini Avocado Tomato For an extra boost of flavor and seasonal goodness. Instructions

Step 1
Let’s start by following the hummus and zaatar recipes posted here. Again, you can grab yourself good quality zaatar, I used here a Palestinian zaatar brand that supports the education of children in Palestine, the name of the brand is Zaytoun.
Step 2
Using a peeler, start peeling at the courgette to create courgette ribbons,
Step 3
Massage the courgettes with olive oil & salt. Cook in a pan over low to medium heat until tender, it will take few minutes. I want to retain its flavor and crispiness.
Step 4
Thinly slice the tomato and avocado & salt
Step 5
Toast your bread & assemble; hummus, zaatar, tomato, avocado, courgette, zaatar.
