Instructions
Step 1
-Heat oil in a saucepan over medium heat
Step 2
- Add broken spaghetti to heated pan, stirring constantly, until pasta turns golden brown (roughly 3 to 5 minutes)
Step 3
-Add chopped pine nuts and minced garlic. Blend well.
Step 4
-Cook until garlic turns translucent.
Step 5
Pour in a third of the chicken broth and increase heat to medium high.
Step 6
-While broth absorbs, continue stirring spaghetti.
Step 7
-Repeat this process with the next third, continuing stirring until liquid is absorbed.
Step 8
-Add last third, stirring until all of the liquid is absorbed and noodles reach desired consistency.
Step 9
-Reduce heat to low.
Step 10
-Stir in ricotta cheese.
Step 11
-Season spaghetti with salt, pepper and red pepper flakes to taste. Remove from heat.
Step 12
-Sprinkle Italian cheese or fresh parmesan over top.
Step 13
-Serve immediately.
Step 14
*The ricotta cheese is optional and adds a level of creaminess to the dish.
To serve as a main dish, you could also add grilled chicken and broccoli.
