Instructions
Step 1
Place a pan over a medium heat and add the olive oil. Add onion, garlic and salt and cook for 5-10 minutes until softened.



Step 2
Add the carrots and cook for a further 10 minutes before adding the cumin, ginger. Cook for 1-2 minutes further until fragrant.
Step 3
Add the coconut milk, tahini, soya milk and lemon juice to the carrots and onion. Allow to simmer for 20 minutes or when the carrots are soft.
Step 4
If your blender cannot handle hot mixtures, leave it to cool and then blend everything into a soup. Re-heat a portion and add the miso. I swirl the miso in the last bore serving as heating miso too hot can kill the beneficial bacteria.
