Instructions

Step 1
Place the sifted flour and salt in a bowl. Add the butter to the flour in small flakes and rub together with your fingertips until it resembles breadcrumbs.

Add cold water to make a dough. Knead lightly and roll into a circle for a 20cm quiche tin.

Step 3
Cover the centre with a piece of aluminium foil and bake for 10 minutes in a preheated oven at preheated oven at 200 C.
Step 4
Remove the foil, put the pre-baked tin to one side and reduce the oven temperature to 190 C.
Step 5
Melt the butter in a pan and fry the spinach for 3-4 min. Add a little water if necessary, but keep as dry as possible.

Allow the spinach to cool slightly and then add the cottage cheese, half of the mixed cheese, chopped hard-boiled eggs, a little salt, pepper and the nutmeg. Pour the mixture into the mould.

Step 7
Beat the remaining three eggs, cream, a little salt & pepper and pour over the spinach mixture.

Sprinkle the grated cheese over the top and bake in the preheated oven at 190 C for around 35 minutes.
