Instructions
Step 1
Pulse almonds and brown sugar in a food processor until finely ground.

Whisk together flour, baking powder, cinnamon, and salt.

Beat butter until creamy, then add ground almond mixture, egg, lemon zest, and vanilla until well combined.

Gradually blend in dry ingredients. Divide dough in half, wrap, and chill for at least 1 hour.

Preheat oven to 350°F (175°C). Roll out dough and cut into desired shapes, with half having a center cut-out.
Step 6
Bake for 10-12 minutes until edges are golden. Let cool.
Step 7
Spread jam on the whole cookies, place cut-out cookies on top, and dust with powdered sugar.
