Step 1
Cut your squash into slices, place them on a baking tray previously lined with parchment paper and bake for about 40-45 mins or until soft (180C/360F).

Let your roasted squash completely cool down.
Step 3
In a mixer, add your squash, cheese, breadcrumbs, egg, sage, salt and pepper. Mix everything for a minute.

Form some little balls, add some blue cheese in the middle and fry in a lot of oil for about 4-5 mins or until golden. Buon appetito!
