Spaghetti squash with turkey, bacon, spinach and goat cheese

Instructions

Step 1
Preheat oven to 400. Line a rimmed baking sheet with aluminum foil.
Step 2
Cut the stem ends off the squash. Stand the squash upright on their flat ends and cut in half lengthwise. Scoop out the seeds, then season the flesh with the olive oil and some salt and pepper.
Step 3
Place the squash halves cut-side down on the baking sheet. Bake for 40 minutes to 1 hour, or until a fork inserted in the squash flesh goes in easily.
Step 4
While the squash is cooking, using a large skillet set over medium heat, cook the bacon until crisp, about 10 minutes. Set the bacon aside to drain on a plate lined with paper towels. Add the turkey to the skillet and brown the meat, stirring well, for 5 to 8 minutes. Transfer the turkey to a large bowl and drain off most of the fat in the skillet, leaving about 1 tablespoon in the pan.
Step 5
With the skillet over medium heat, pour in the wine and use a wooden spoon to scrape up the browned bits on the bottom. Cook and stir for about 1 minute to reduce the wine by about half.
Step 6
Add the spinach to the skillet, stirring and heating until it wilts, about 3 minutes. Then crumble in the goat cheese and stir to soften and melt slightly for about 3 minutes.
Step 7
Crumble the bacon and stir it into the turkey. Add the spinach-cheese mixture and stir to blend.
Step 8
Remove the squash from the oven. When it's cool enough to handle, use a fork to comb out the flesh from the rinds of the squash, making "spaghetti" strands, and place in four serving bowls.
Step 9
Top each squash mixture with the turkey, bacon, and spinach mixture and serve.
