Ingredients

16 slicesturkey bacon
cut in half crosswise
1 x 8 ouncesalmon fillet
poached, skin removed, and cooled
2 tablespoonsmayonnaise
salt
pepper
2 tablespoonsolive oil
2avocados
halved, pitted and mashed
4 tablespoonsground flaxseed
0.5juice of lemon
3 tablespoonsfresh chives
minced
4 leavesbutter lettuce
bibb, or other
2tomatoes
ripe, cut into 4 slices
Instructions
Step 1
Preheat oven to 400. Line a rimmed baking sheet with aluminum foil, then place a baking rack into the baking sheet.
Step 2
Make 4 bacon weaves. Cover a portion of your work space with parchment or wax paper. Arrange 3 bacon half-strips in a row on the parchment. Fold the middle piece back by two-thirds. Lay another half-strip of bacon across the 3 pieces at the fold. Unfold the piece over the newly added strip. Now fold the 2 side strips back by half and lay another half-strip over the rows at the new folds. Fold the side pieces back down and fold up the middle piece again by one-third. Finally, lay another bacon half-strip across the fold and tuck it underneath the end slices. Flatten the strip across the fold and tuck it underneath the end slices. Flatten the bacon weave with a rolling pin or the bottom of a skillet, then transfer to the oven rack on the baking sheet. Repeat, making 3 more bacon weaves.
Step 3
Bake until the bacon is crisp, about 25 minutes. Drain the bacon weaves on a paper towel-lined plate. Cover to keep warm.
Step 4
Make the salmon burgers: Mash the salmon in a medium bowl, with mayonnaise as needed to shape into 4 patties. Season with some salt and pepper.
Step 5
Place a medium skillet over medium-high heat and add the olive oil. When the oil is shimmering, add the salmon patties and cook for about 8 minutes, flipping once, until lightly browned on both sides. Keep warm.
Step 6
In a medium bowl, stir together the avocado, flaxseed, lemon juice, and chives.
Step 7
Place a bacon weave on each of 4 serving plates, and spread with some of the avocado mixture. Add the salmon burger, a lettuce leave, and a tomato slice. Serve.
