1 packagerice and vermicelli noodles with asian seasoning
fried rice
½ cupreduced-sodium chicken broth
2 tablespoonscreamy peanut butter
1 tablespoonreduced-sodium soy sauce
1 tablespoonvegetable oil
0.75 poundskinless boneless chicken breast
cut into 1/2 inch pieces
2cloves garlic
minced
2 cupsfrozen mixed carrots broccoli and red bell pepper
vegetable medley, thawed, drained
2 tablespoonspeanuts
chopped, optional
Instructions
Step 1
Prepare Rice-A-Roni mix as package directs.
Step 2
While Rice-A-Roni is simmering, combine chicken broth, peanut butter and soy sauce; mix with fork. Set aside.
Step 3
In second large skillet or wok, heat oil over medium-high heat. Stir-fry chicken and garlic 2 minutes.
Step 4
Add vegetables and broth mixture; Stir-fry 5 to 7 minutes or until sauce has thickened. Serve over rice. Sprinkle with peanuts, if desired.
