3russet potatoes
medium

½ cupbread crumbs

1 tsporegano

1 tspgarlic powder

1 tspkosher salt

½ tspground black pepper

2 Tbspolive oil
For sauce and toppings
Instructions
Step 1
Preheat oven to 425F. Line 2 baking sheets with foil and grease with cooking spray.


Step 2
Use vegetable peeler to peel potatoes


Step 3
Cut potatoes in half lengthwise, the cut each in half unto slices, about 1/2-inch thick.

Step 4
Add breadcrumbs, 1 tsp oregano, 1 tsp garlic powder, 1 tsp kosher salt, pepper and oil to large plastic bag

Add potatoes to bag . Seal the top and shake well to coat.
Step 6
Add potatoes to baking sheets in single layer

Bake 30-35 minutes until browned
Step 8
Meanwhile, prepare sauce. Add mayonnaise, yogurt, and lemon juice to small bowl.



Step 9
Add 1/4 tsp each of onion powder, garlic powder, oregano and salt. Stir well. Set sauce aside.




Step 10
Prepare toppings. Dice tomatoes. Cut into slices. Then into small squares. Set aside in small prep bowl.

Step 11
Remove stems from parsley and finely chop. Measure 2 Tbsp and set aside in small prep bowl.

Step 12
Drizzle each serving of fries with sauce, then top with tomatoes, olives, feta and parsley
