Instructions

Step 1
Thinly slice a large Aubergine and two zucchini then dice a red onion and slice a large red bell pepper . Place these all on a baking tray then in a small bowl add olive oil crushed garlic rosemary chopped mint and parsley and stir to combine . Now drizzle this all over the veggies then season generously with salt and black pepper and bake at 200 c fan / 392 c for 20 minutes .

Step 2
Next slice the tomatoes into wedges and sprinkle over the roast vegetables . Crumble the feta on top then toast the sunflower seeds until golden in a dry pan and sprinkle all over . Garnish with some more fresh herbs and enjoy
