Instructions

Step 1
Soak five wooden skewers on a baking sheet filled with water just enough to cover the skewers. Set aside.
Step 2
Preheat oven to 425°F, and line a 9 × 13-inch oven-safe casserole dish with two layers of foil. Set aside.
Step 3
In a small bowl, whisk together mustard, maple syrup, vinegar, salt, and pepper.
Step 4
Spear 5 or 6 chicken cubes on each wooden skewer.
Step 5
Place the skewers into the casserole dish. If your skewers are too long, cut or break them to fit the casserole dish.
Step 6
Pour half the sauce on top of the chicken skewers and, using a pastry brush, brush the sauce to coat the chicken. Set leftover sauce aside.
Step 7
Place in the oven on the top rack and bake for a total of 45 min-utes, uncovered. Flip the chicken skewers every 15 minutes, and brush the chicken with a liberal amount of the leftover sauce until the chicken is cooked fully through (internal temperature of 160°F).
Step 8
Set oven to broil, and broil chicken for 5 minutes, watching it carefully as not to burn it.
Step 9
Remove and let cool for 10 minutes before serving.
Step 10
Serve with couscous or rice and squash or other veggies
